BBQ Beef Meatballs with Smashed Potatoes and BroccoliFamily Meal - Spicy - Serves 4 - Ready in 35 Minutes Our family loves a good mashed potato dinner, and my kids haven't yet met a meatball they didn't like. With that in mind I saved this recipe for last in the hopes it would be a great way to finish off our experience with the Hello Fresh box for the week. Based on the last two meals, I wasn't surprised by the fresh quality of the meat and produce, even with it being in the refrigerator for the past three days. Freshness is something I came to expect when I opened each of the individual meal-kit bags, and never once was I disappointed in what I found.
Cooking I would classify this recipe somewhere between easy/medium to execute. There is nothing unusual in its preparations, but there is more to do compared to the Pork Fajitas recipe. Simple cutting and chopping techniques were required to prepare the garlic, chives, potatoes and broccoli for cooking. Similar to the Sweet Potato Maple Mash in Monday's recipe, you do require a mashing utensil to break down the potatoes, but that can be done with a fork if you are in a pinch. The ground beef just needed mixing and shaping before putting it in the oven and the BBQ sauce required whisking in a bowl. As far as time was concerned, we were definitely over the 35 minute time allowance. Once again, we found ourselves in the time frame of 45-50 minutes from start to finish. Overall, it's not a stressful recipe but definitely would not be a go-to when pressed for time on a busy weeknight. Final Thoughts
